実務実習中の薬学部５年生を対象として、抹茶を含む焼菓子（クッキー）を摂取することによるストレス予防および軽減効果を、唾液アミラーゼ活性および主観的ストレスを指標に評価する。

The purpose is to measure stress symptoms in students during pharmacy practice and to evaluate the efficacy of Matcha included in cookie in suppressing chronic stress, by measuring the salivary amylase activity and subjective stress.

薬学部５年生(非喫煙者)
臨床試験の説明を受け同意した
抹茶（3 g）を含むクッキーを、毎日15日間摂取できる（土日祝日を除く）
１日２回唾液アミラーゼ活性を15日間測定できる

Students of pharmaceutical sciences in the 5th grade, non-smoker.
Obtained written informed consent from the student before participation.
Possible to take Matcha (3 g) included in cookies for 15 days excluding weekends and holidays.
Possible to check salivary amylase activity two times daily for 15 days.

ストレスを負荷したマウスにおいて、カフェインとエピガロカテキンガレートに対するテアニンとアルギニン（CE/TA）のモル比が2以下であるときに抹茶のストレス軽減効果が有意に認められた。ヒト試験において、動物実験でストレス軽減効果が認められた抹茶を含むクッキーを食べていた場合、ストレスの指標である唾液アミラーゼ活性がプラセボ群より有意に低かった。抹茶がクッキーに含まれていた場合も、CE/TA比が２以下であればストレス軽減効果が期待できることが明らかとなった。

The stress-reducing effect of matcha added to confectioneries is not clear. In animal experiment, the ratio of caffeine and epigallocatechin gallate to theanine and arginine (CE/TA) was a key indicator for the suppression of stress. The result of clinical study showed that matcha with a CE/TA ratio of 2 or less displays a stress-reducing effect, even if it is included in confectionery products.
