既存データである日本人の食事記録から
①精度の高いORAC測定を行い、水溶性・脂溶性抗酸化能を測定、データベースを作成した。
②①のデータベースを用い、日本人の伝統的な食事におけるORAC抗酸化値を測定、その結果、穀類、魚類、豆類、お茶で構成される伝統的な日本食は抗酸化摂取量が高いことが明らかとなった。

Commonly consumed foods were estimated using 3-day DRs over the four seasons among 55 men and 58 women in Japan. These dietary records were gathered by voluntary participants in 1996 and 1997.
