本研究では、健康な男女を対象とし、食事の際の咀嚼が食後血糖変動ならびに胃排泄能に及ぼす影響について明らかにすることを目的とする。

日本語
1名につき「咀嚼なし」、「咀嚼あり」の2試行の食事負荷試験を実施する。「咀嚼なし」試行においては、「咀嚼あり」試行と同一の試験食を粉砕し、適量の飲料水とともに撹拌して作成した流動食を摂取する。咀嚼が食事の栄養組成と独立して血糖動態や胃排泄能に及ぼす影響について解析を行う。

A participant will conduct 2 trials, mealtests with and without mastication. In the mealtest without mastication, participant will take a grinded testmeal, which has same nutrient composition as the trial with mastication, dissolved in water. The effect of mastication itself on postprandial glucose metabolism and gastric excretion independent of nutrient composition of the testmeal.

・経口血糖降下薬の服用またはインスリン注射を行っている者
・消化性潰瘍を有する者
・アスピリン喘息またはその既往を有する者
・口腔内に異常のある者（補綴歯の有無は問わない）

a person taking oral hypoglycemic agents or insulin injection/a person with peptic ulcer/a person suffering from or has a history of aspirin-indiced asthma/oral diseases (doesnot matter whether having any prosthetic appliances or not)

主な結果/Results

日本語
咀嚼が胃排泄ならびに食後血糖変動に及ぼす影響について検討した。8名の健常人は、熱量と栄養組成の等しい半固形化食（N）または固形食（M）を別日に摂取し、胃排泄能評価のためのアセトアミノフェン（AA）試験を実施した。食事前後のグルコース（Glu）、インスリン（Ins）、GLP-1、AAの血中濃度と食事誘発性熱産生（DIT）を評価した。MにおいてNに比べ総咀嚼回数と食事所要時間は大きく、食後の血中Glu、Ins濃度のピークは早かった。食後の血中AA濃度のAUCは、MにおいてNに比べ有意に大きかった。DITは両試行で同等であった。

Eight healthy young individuals participated in the experiments for a two-meal test, in a crossover design. The postprandial blood glucose and insulin levels in the Chewing trial peaked significantly earlier than those in the Non-Chewing trial. The AUC of acetaminophen level in the Chewing trial was significantly greater than the Non-chewing trial The DIT was similar in the two trials.
