Key inclusion criteria

1. Participants who agreed with the study purpose and experimental procedures of this study.
2. Participants who have consented to participate in this study.
3. Participants who have signed an informed consent form.

Key exclusion criteria

1. smoker
2. obesity (body mass index > 30 kg/m2)
3. Hypertension (systolic blood pressure >=140 mmHg, diastolic blood pressure >=90 mmHg)
4. diseases or disorders affecting physical activity
5. pharmacotherapy compromising the cardiovascular system, including antihyperlipidemic, antihypertensive, or antihyperglycemic medications
6. a person with a food allergy

Results

In the plant-based diet trial, cfPWV was significantly lower in the 120 min after the meal than before the meal (P<0.05). In addition, FMD was significantly higher in the 120 min after the meal than before the meal (P<0.05). There was no change in cfPWV and FMD between before and after intake in participants in the animal-based diet trial. Maximal oxygen uptake was significantly higher in the plant-based diet trial than in the animal-based diet trial (P<0.05).

Baseline Characteristics

Eleven healthy adult males participated in this study.

Participant flow

In the initial phase of the experiment, 14 participants were enrolled in this study. However, during the course of the study, 3 participants dropped out, resulting in a final participation of 11 individuals.
